For Jonny and Abbe Todd of the historic Brick Mill Café in Waikuku, supporting local producers and suppliers is a no-brainer. “Supporting local producers becomes a flow on effect for businesses and people living in our region,” explains Abbe. “Buying local keeps another local business going which employs another local person which then supports that local business. It becomes an infinite loop of support.”
The couple, who purchased the busy café in 2019, choose to use Waikuku-roasted Ris’tretto Coffee, Benzie Free Range eggs from Eyrewell and fish from North Canterbury Seafood Market in their fresh and tasty menu offerings. Punters are drawn in from the busy SH1 that passes by outside for Brick Mill Café’s famously good coffee, brunch menu and kids platters. With a background in hospitality and barista training, Abbe and Jonny run a tight ship with great service and an ever-changing selection of delectable cabinet food on top of their legendary menu.
Always on the lookout for new collaborations and opportunities to support local, the pair will always try to use Canterbury products first and foremost. “We believe that the more businesses can collaborate and support each other, the more successful our community can be.”
